Built on a Roman Villae, The Domaine de la Bastide is an old fortified Templar's farm with more than a thousand years old know records. Partly destroyed during the French revolution, it has now come back to its original aim: wine making. The cellar was built in the late 70's. Total capacity of more than 7500 hectoliters. Fermentation is conducted in stainless steel vats of 200 hectoliters with controlled temperature. After fermentation the wine is drained into concrete vats coated with epoxy resins. Vincent and Stephanie Boyer are the second generation operating this winery. They are currently practicing organic viticulture and hope to be certified in the near future. The Domaine de la Bastide is located in the Rhone Valley, 50 km north of Avignon, in a little village called Visan. The vineyards are located in Visan and Suze-la-Rousse. Most of them are on stony dry soils, typical of the South Rhone Valley.

Bastide Côtes du Rhône Blanc is a lovely straw gold color with brilliant reflections, aromas of white fruits, pear, apricot and a touch of toasted almonds. Fresh and nicely balance, with a long finish. This wine is fermented on the lees for 20 days in steel tanks.

Pairs nicely with fish and cheese, and can be a great aperitif!

Entre-Deux-Mers literally translates to "between two seas" but it actually lies between two rivers: the Garonne and the Dordogne Rivers. The soil of compact clay and limestone would imply it is inhospitable to grape vines, but the opposite is true. The more stress on the vines makes for better wine. Right Bank refers to the Bordeaux region on the Northern Bank of the Dordogne River. Pomerol and Saint-Emilion are Bordeaux regions on the Right Bank. Serge and Nathalie Audubert have owned Chateau Laborde since 1996. Their son, Vincent, joined them in 2014. Wines are produced from the appellations Bordeaux white, Bordeaux superior and crémant de Bordeaux. The Château Laborde is located nearby (10 to 20 km) of the great wines of the Gironde (Pomerol, St Emilion, Mountain, Puisseguin, Lussac). Chateau Laborde also holds plots at Lalande de Pomerol, Château Champs de Lalande and Domaine Bois de Laborde. Château Laborde remains more than ever a family farm on a human scale. In 2015 they expanded the size of the 8-hectare vineyard on the “Lalande” appellation of Pomerol and Bordeaux superior, bringing the farm to 25 ha. Certified Sustainable. Since 2012, Chateau Laborde has been members of the SME (Environmental Management System in Bordeaux) and they have been certified in the internationally recognized ISO 14001 standard.

The Delle VenezIe region in northeastern Italy is probably the best place in the world to grow Pinot Grigio grapes and turn them into what is arguably the world's most refreshing white wine. The beautiful, hill region is bordered by the Alps to the north and by the Adriatic Sea to the southeast. Here cool breezes sweep down from the mountains to the sea and provide a constant contract to the hot sun. This keeps the vineyards very cool at night and nurtures Pinot Grigio naturally playful acidity and lively aromatics. The Botter family has been producing wines like Avanti in Fossalta di Piave, north of Venice, since 1928. Over the generations the company has grown significantly but with purpose, and it remains family owned and operated with a focus on exports.

The Vines are needed without irrigation, so they grow slowly and become hardy and resilient. They are also trained low, so the grapes grow no higher than one foot from the stoney stoils. This allows them to suck up every extra bit of warmth radiating from the stones in the this relatively cool growing climate. Grapes are picked when the are fully ripe. Because of the northern setting and cool nights, acidity is maintained even in the ripest vintages. Grapes are pressed gently by pneumatic press. The juices is first kept at a very low temperature for five days to develop flavor and maintain freshness and aromatics. Fermentation is spontaneous through native, ambient yeast, but non-aromatic cultured yeast is added as needed. After fermentation the wine rests on its lees for several months before being filtered and bottled.Les Fontenelles is produced by La Cave des Vins de Sancerre, the first and only growers' cooperative in the appellation. Founded in 1963, it remains relatively small with only 80 growers situated across 12 villages. This reach provides La Cave with access to a wind variety of terroir, from north to south, from clay to limestone, flint or caillottes. The diversity provides the flexibility to produce compelling wines with consistency and quality in every vintage.

Lionel Gosseaume is a 3rd generation winegrower. He grew up in his family's vineyard, but in 2007 acquired his own 22 acre vineyard from his father's friend, Jean-Claude. Some of his vines are very old, but the average age is about 25 years. The clay and silt soils are well suited to the production of light, fruity wines with distinct minerality and finesse. These soils are known locally as "Sables de Sologne". Blended from several separately vinified vineyard blacks to enhance aroma and complexity. unification and vine management is unique for each block to extract the best of the soil and best from the grapes. Each plot and vat makes its contribution to the final wine.

Hasen Sprung is produced by Winzer Krems, a grower’s cooperative located in small picturesque town of Krems, in the heart of the Niederösterreich DAC. This famous region is situated in the Danube Valley, 40 miles west of Vienna, and marks the eastern border of one of Europe’s most beautiful river landscapes – the Wachau. Most of the vineyards in Krems rest on sun-exposed primary rock and loess terraces with difficult access. The influence of the river Danube produces a mix of warm air from the South-East and cool air from the North. This micro-climate and the “loess“ soil (prehistoric rock), give the wines their distinctive full fruit aroma. Winzer Krems is owned by 880 winegrowers who grow their grapes on nearly 3,000 acres in Krems and the surrounding wine growing regions. The winegrowers observe guidelines for pruning, soil treatment, foliage treatment and pest management. Quality consultants confirm compliance with these guidelines throughout the entire cycle of the wine year.
